They see that you can achieve immense satisfaction without spending hours in the kitchen or feeling heavy after a meal. This lightness of presentation creates a space where they can project their own curiosity. They don't adopt my cooking because I ask them to, but because they see, with their own eyes, that it is a path to freedom and pleasure. I avoid food dogmas like the plague. Nothing is more burdensome than locking yourself into rigid labels: 'I am this', 'I never eat that'. A solid foundation, a thousand possible expressions

My culinary approach is based on a simple foundation: raw products, noble fats, quality proteins and a drastic reduction in fast carbohydrates. But this foundation is not a straitjacket; it is infinitely adaptable. This is what I want my children to remember. They can adapt these principles to their own tastes, to their travels, to their encounters. They can cook Chilean, Australian, Asian or Mediterranean, as long as they respect the fundamental structure that preserves their metabolism.

This flexibility is what allows true transmission across generations. A tradition that cannot evolve eventually dies. By transmitting to them the 'skeleton' of my method - the simplicity and accuracy - I give them the freedom to create the 'flesh' that resembles them. They are not clones of my cuisine, they are the continuators of a philosophy of the essential. Knowing that my principles will survive through their own creations is my greatest satisfaction. Wisdom is not a frozen relic, it is a fire that we maintain and pass through.

Health as the ultimate and irrefutable argument

I don't preach, I live. And my life is my most convincing argument. My children see that their father, at sixty, has a vitality, a clarity of mind and a physical endurance that many people of forty years envy. They see that I am not limited by my age, that I can still surf, cook for hours or travel without excessive fatigue. This living testimony is worth all the nutrition books in the world. This is irrefutable proof that my food choices are paying off.

This vitality is not arrogant; it is an invitation. She shows them what is possible when you treat your body with respect and intelligence. They see the contrast between my form and the premature decline of some of my contemporaries who made other choices. This silent observation is the driving force behind their own reflection. They understand that health is not a gift from heaven, but a patient and joyful construction. My example gives them the hope and motivation to take care of themselves, not out of fear of illness, but out of love for life.

A life free from burden

Ultimately, the message I am sending is one of lightness. Lightness on the plate, of course, but also lightness in the mind and in life. By learning to eat without being weighed down, we learn to live without being weighed down. We discover that we need much less than what the consumer society wants us to believe. This chosen sobriety is the key to a free and vibrant existence. We no longer carry the weight of our excesses, we no longer suffer the fog of our bad digestions.

It is this freedom that I want to bequeath to them. I want them to feel light as a feather, able to soar toward their dreams without being held back by a failing body or a foggy mind. The kitchen is the starting point of this liberation. By controlling their diet, they control their energy. And by controlling their energy, they control their destiny. Lightness is not an absence of depth; on the contrary, it is the purest form of power. This is the final message of my sixty years of cooking: be light, be real, be free.
