This is how we live here: outside. The kitchen is not confined between four walls, it flourishes on the beach, while camping, in the heart of wild nature. For me, that’s where you really understand food. When we cook on the sand, with the sound of the waves as our only orchestra and the wind as our seasoning, we realize that the act of eating is a deep connection with the elements. Nothing but fire, food and the sea. It's a sacred trinity that puts us in our rightful place.
Cooking outdoors changes our perception of time and effort. We no longer seek artificial perfection, we seek the accuracy of the moment. We learn to deal with the whims of the wind, to monitor the embers carefully, to respect the raw product. It is a school of patience and humility that makes us more aware of the value of what we consume. The beach is my temple, the grill is my altar. Clarity begins under the open sky.
The end of the superfluous
Outside, it is simply impossible to complicate things. We don't have all the paraphernalia of a professional kitchen, no unnecessary gadgets, no room for frills. Cooking then becomes what it truly is: a simple and powerful act of transformation. We focus on the essentials: good protein, high heat, minimal seasoning. This automatic simplification is a blessing. It frees us from mental noise and allows us to rediscover the true taste of food.
This forced sobriety is a strength. It teaches us that we don't need much to be happy and well nourished. A piece of fish grilled over a wood fire, eaten with your fingers facing the ocean, is worth all the feasts in the world. It’s a lesson in applied minimalism that shines through all aspects of life. By simplifying the plate, we clarify the mind. We emerge from confusion to enter into the obvious. Clarity is the fruit of this chosen stripping.
Listening to the body
In the open air, the rhythm becomes naturally right. We don't eat because it's time, but because the body demands it. When I'm hungry, I prepare a fire. When it's cooked, I eat. No artificial schedules, no absurd social constraints. We reconnect to our own internal signals, to this biological clock that modern life has too often disrupted. The meal is no longer a break in the day, it is its beating heart. At 38, I favor this quality of being. I want every meal to be a full life experience.
