Heat and fat

Ultimately, it's a paradox that often surprises visitors: the hotter it is under the Australian sun, the more fat I feel able to eat. We tend to believe that heat calls for absolute lightness, watery salads and sweet fruits. But my experience is the opposite. When the sun is strong, my body demands high quality natural fats. And contrary to popular belief, this does not weigh on me at all. On the contrary, it gives me a foundation, a thermal and energetic stability that nothing else can offer.

This paradox is explained by the quality of the fats I choose. We are not talking about fried or industrial fats, but pure animal fats, virgin olive oil, fats from wild fish. These lipids are clean energy vectors, immediately usable by metabolism. Under the sun, they become fluid, light, almost ethereal. It’s a climatic alchemy that we only understand when we experience it. Fat is the shield of my vitality.

From this perspective, it is fundamental wisdom: the body knows how to adapt according to the climate, if we give it the opportunity. Trusting the climate means accepting not to be the same man in summer as in winter. It’s letting nature direct our appetite and our needs. In Australia, the sun is our master, and we have to deal with its strength. My cooking is a tribute to this radiant power. It is rich, it is vibrant, it is solar. Fat is my ally, clarity is my horizon.
