Grain-free land and sea

New Zealand offers

New Zealand offers everything a human being needs to thrive: exceptionally pure marine proteins (fish, eel, mussels, octopus, oysters), wild and cultivated land vegetables (leafy greens, bitter salads, wild mushrooms, macadamia nuts), and minor fruits like wild berries. It’s an open-air pantry, a cornucopia that begs to be respected. We live in a land of blessing.

It's abundant. It's low-carb. It is biologically complete. We don't need to import superfoods from the other side of the world when we have access to such local wealth. Each ingredient carries within it the Mana of our territory. By eating what is there, we strengthen our connection with the land (Whenua) and the sea (Moana). It’s grounding nutrition, where every bite reminds us where we come from and who we are.

Cereals?

Cereals? They were never part of the original Maori culture. Never. People today think that bread or rice are universal basic foods, essential for life. This is false. It is a recent historic construction. For us, cereals were a European addition, arriving with the settlers' ships. They have no roots in our soil, they have no place in our ancestral memory. They are strangers to our metabolism.

Rice. Wheat. But. All this happened late. Before that, we were a people of warriors and navigators, blessed with strength and endurance that astounded the first explorers. And we didn't need a single crumb of bread for that. Our energy came from fats and proteins, not starches. Grains brought with them addiction, inflammation and loss of our original clarity. It's time to remember this.

Before these additions

Before these additions, we were completely fed. Completely strong. Completely clear. Our ancestors had no cavities, no diabetes, no heart disease. They lived in harmony with the cycles of nature, supported by a dense and pure diet. Their body was their work tool and their pride. They knew that true wealth is not measured by the accumulation of grains, but by the quality of life and the strength of Mana.

Without a single grain. It’s a living demonstration. It is a historical and biological fact. We are proof that human beings can reach their peak without grain agriculture. By returning to this model, we are not making a sacrifice, we are making an act of liberation. We get rid of unnecessary weight to regain our agility and vigor. Clarity is the fruit of this chosen stripping.

Complete proteins

Marine proteins contain all the essential amino acids, in the perfect proportions for the human body. They are accompanied by precious fats and rare minerals. Non-starchy vegetables provide the micronutrients, fiber and phytonutrients needed for smooth digestion and strong immunity. It is a complete, closed, self-sufficient system. You don't need anything else to be at the top of your game.

That's enough. Not just enough to survive, but optimal to thrive. At 45, I feel this completeness every day. I no longer have these weird desires to snack, these feelings of withdrawal that cereals created in me. My body is finally satisfied, because it receives the elemental building blocks it needs. Satiety is real, because it is nutritional, not just volumetric. Strength is in density.

Back to basics

Coming back to that is a return to wholeness. Not a break with progress, but a clarification of what is truly important. It is learning to distinguish the necessary from the superfluous, the living from the inert. My kitchen is today a space where I celebrate this newfound simplicity. I no longer seek to imitate Western models, I seek to honor my own lineage. It is a path of truth and pride.

See clearly: that we never needed cereals to be happy or healthy. It’s a realization that changes everything. We suddenly feel lighter, freer, more in control of our destiny. We are no longer dependent on an industry that sells us products that we do not need. We once again become children of the earth and the sea, nourished by the source. Clarity is my horizon, completeness is my reality.

Territorial wisdom

This is New Zealand wisdom: that the land already gives everything it takes. Land and sea work together to offer us the best. There is no lack, there is only inattention. By opening our eyes to the riches around us, we find our own path to balance. My cuisine is a tribute to this generosity, an invitation to rediscover the power of the local and the raw.

You just have to use it intelligently. You just have to respect it with gratitude. By eating Maori, I only nourish myself, I perform an act of resistance and recognition. I say thank you to the earth that carries me and to the sea that nourishes me. I find my Mana in every meal. Life is beautiful when it is aligned with its territory. ¡Zhu ni hao wei kou e viva a terra real!
