Instructions
  1. Preheat the oven to 200°C. Season the inside of the chicken, slip the lemon and a few sprigs of thyme into the cavity.
  2. Coat the skin with butter or oil and rub with salt and pepper; roast 60–75 minutes until internal temperature reaches 75°C at thigh.
  3. Let sit 10 minutes; deglaze the dish with a little water or broth to recover the juice, filter and serve as a topping.

  • Add crushed garlic under the skin for added flavor.
