Coastal cooking without heavy grains

The essence of the Atlantic

Portuguese cuisine is often associated with rice and bread, but if we take a closer look at our most emblematic dishes, we discover a different reality. Take the Caldeirada, this stew of varied fish, or the Arroz de Marisco (rice with seafood). If you remove the rice or potatoes, what are left? What remains is the essence of the Atlantic: flavorful fish, delicate shellfish, juicy tomatoes, crunchy peppers and fresh herbs. This is where the true soul of our cuisine lies. The rest is just support, often superfluous.

As I focused on these clean coastal dishes, I realized that grains were not necessary to create richness or satisfaction. The sea is self-sufficient. A well-reduced fish stock, enriched with excellent olive oil, provides a depth of flavor that no starch can match. It is a cuisine of the essential, where each ingredient has its place and its reason for being. By freeing our traditional recipes from the weight of cereals, we are not impoverishing them; we clarify them.

The path to clarity

Reducing cereals in my kitchen was not a sudden change, but a natural reduction, almost obvious. I started by replacing the rice with more green vegetables or lighter roots. And suddenly the flavors started to sing. The fish was no longer suffocated by starch, it could finally express all its finesse. It's as if I had removed a veil that covered my dishes. Clarity returned, both on the plate and in my body. It is a rediscovery of purity.

This reduction had an immediate impact on my energy. No more sleepiness after lunch, no more feeling of heaviness that lasts for hours. I now feel light and alert, ready to face my day with enthusiasm. At 35, I realize that my body never needed these mountains of carbohydrates to function. He simply asked for quality, nutritional density and fluidity. Grain-free cooking is my answer to this need for metabolic clarity.

Faithful companions

To replace grains, I turned to our traditional coastal vegetables: green cabbage, turnips, chard, spinach. These vegetables, which often grow a few kilometers from the sea, are the faithful companions of fish. They provide the necessary structure, fiber and minerals without ever increasing the glycemic load. A generous portion of cabbage sautéed in garlic and olive oil goes perfectly with grilled sea bream. It is a complete, balanced and deeply satisfying meal.

These vegetables have their own personality which enriches the plate. They are not simple 'support', they are full partners. By learning to cook them with respect — just enough cooking to keep their crunch and color — we discover an infinite palette of flavors. Grain-free coastal cuisine is an invitation to explore the richness of the vegetable garden in harmony with that of the sea. It is a marriage of reason and passion that deeply nourishes the body.

Homage to the past

Returning to cooking without heavy grains is, for me, a way of honoring the true Portuguese tradition. Our ancestors, especially in poor coastal areas, did not always have access to abundant rice or wheat. They survived thanks to the sea and their small garden. My cooking today is an echo of this wisdom of necessity, transformed into a conscious health choice. I do not reject my heritage, I dust it off to extract from it what is most vital and most lasting.

At 35, I am proud to carry this vision of modernity anchored in the soil and salt. I want to show that you can be deeply Portuguese while being resolutely focused on a low-carb diet. The sea is our guide, it teaches us fluidity and strength. By cooking without grains, I remain faithful to this Atlantic spirit which favors movement and clarity. The table is the place where this tradition is reinvented every day, for our greatest good.
